In a mixing bowl take Sooji and yoghurt. Now add water. mix and let Sooji soak in water and yogurt for half an hour. {We want a medium-consistency mixture, not so runny, so add water accordingly}
After half an hour, add all the vegetables and spices. Mix well
Lastly add Eno and mix in one direction.
Heat non stick Uttapam mini-pan, grease it with little oil.
Pour a ladle full of batter into the tava to make mini uttapams.
Cook it till golden brown from both the sides
Serve with tomato ketchup or green-coriander chutney
Serve Hot with Garma-Garam Adrak wali Chai

You can take any vegetable of your choice. I have skipped onion but you can add if you like.
