Chawal ki Kheer is a traditional Indian dessert recipe that is made of Basmati rice, milk, dry fruits, and saffron strands. Flavourful, yummy, and an easy one-pot recipe – this Rice Kheer is loved by all. In India, Kheer is usually made during festivals, Śrāddha, or during weddings.
In my home, we often make Chawal ki Kheer as we all love eating it with Puris. I personally love eating Cold Kheer with Puris. You can have it hot or chilled, depending on your taste and preference.

This Kheer recipe is our traditional recipe which I have learned from my Mother as we usually make it at home during Diwali or when everyone in the family eats together. The best combination of having Kheer is with Puri, Aloo Sabzi and Pakoras. It’s a complete meal/ thali in our home.
Chawal ki Kheer is a one pot recipe but requires constant stirring. It’s one of those recipes which I think everyone should know. In Indian houses, if you are a newly bride, you are supposed to either make Halwa or Chawal ki Kheer when you start cooking in the new kitchen for the first time.
So basically, it’s Rasoi ki Rasam where the daughter-in-law makes a sweet dish or Kheer before she starts making anything else.
Few things to keep in mind while making Chawal Ki Kheer:
- Use full fat cow milk. If you use Packet milk, that can be used to.
- I use Basmati rice as the grain is long and doesn’t get mushed in the milk. You can use any Rice which is flavourful and is available in your kitchen.
- Soak the rice at-least an hour before adding it to the milk.
- In our household, we like thick Kheer and that’s why we boil it for a longer period of time.
- Dry fruits such as chopped almonds, pistachios can be added. If you have Dhoodh masala, that can be added too.
- Saffron strands soaked in warm milk gives a nice flavour and that beautiful color to the Kheer.

- 1 Litre milk
- 1/4 cup basmati rice
- 75 - 100 gms sugar
- 5-6 strands Saffron
- 1/8 tsp Cardamom Powder
- 1 tbsp almonds (Chopped)
- 1 tbsp Pistachios (Chopped)
- 1/2 tsp nuts Chiraunji

- Wash rice, changing water until the water appears clear. Soak rice in clean water for about 30 minutes.
- Boil milk in a deep bottomed pan, boil it till it reduces to 3/4th. Keep stirring in between as the milk might stick at the bottom.
- Add rice to the milk and stir it continuously for about 10-15 mins or until rice is cooked. Cook it on low flame so that it doesn't get burnt.
- When rice is cooked, add sugar and stir it for 5 minutes or till sugar gets dissolved.
- Mix saffron strands in a few drops of milk and add it to the above mixture.
- Add cardamom powder, pistachios, almonds, and nuts of your choice.
- Garnish it with rose petals.
- Serve hot or cold.

- You can add dry-fruits according to your taste and preference
- Adding saffron milk gives a lovely aroma and color.
- You can serve it hot or cold. Some people prefer it cold, refrigerate it when it cools down.
