Nankhatai Recipe | Eggless Indian Biscuits.
Nankhatai is an Indian shortbread biscuit made with all-purpose flour, besan, and sooji. These biscuits are crumbly from outside and they just melt in your mouth. A perfect recipe to have with a cup of tea.

  1. In a mixing bowl or a thali, add in the maida, besan, and sooji. Mix all these well.
  2. To this add baking powder, baking soda, salt, and cardamom powder. Mix everything well.
  3. Now add powdered sugar and mix. At this stage, you can taste and adjust the sugar as per your liking. You can add less or more.
  4. After all our dry ingredients are mixed well. Now we will add ghee. Take ghee at normal/room temperature like the liquid ghee we use at home.
  5. Combine everything together. The idea is to make a medium soft dough so that we are able to make balls/nankhatai out of it.
  6. Knead the dough properly as it makes a smooth dough.
  7. Now divide the dough into 12-13 balls and roll them using your palm. Gently press your thumb in the middle of the Nankhatai giving it a shape.
  8. Decore these Nankhatais with pistachios/almonds/dhoodh masala.
  9. Preheat Microwave at Convection mode for 5 minutes at 150 degrees.
  10. Arrange these Nankhatai on a baking dish/tray and put this tray inside the Microwave on a lower rack.
  11. Bake these for about 15-17 minutes at 150 degrees on a Convection mode.
  12. Once done, cool these down and store them in an airtight container.
  13. Serve it with a hot cup of tea.
Recipe Notes
  • Knead the dough enough so that it becomes smooth. 
  • Can add more ghee if required. 
  • Adjust the sweetness according to your taste. 
  • Milk powder can be used to enhance the richness.
  • Preheat cooker with 1 1/2 cups of salt, once hot, place the idli plates and bake for 18 mins.
  • Can be made on a Gas Tandoor too.
