Instructions
Wash, chop all the vegetables beforehand. You can add any vegetables of your choice.
Heat oil in a Kadhai. Add jeera, rai, hing, and chopped green chilies. Once it starts to splutter.
Add all the vegetables except tomatoes and let it cook on low flame.
Add salt so that vegetables start cooking fast. Mix it in between. It will take 5-10 minutes for the vegetables to cook. Cover it with a lid.
Once the vegetables have cooked add all the spices and chopped tomatoes. Mix it well.
Cover it with a lid and cook it for another 5-7 minutes, till all the vegetables come together.
Voila, mixed vegetable sabzi is ready to serve. Garnish it with chopped coriander leaves.
Serve it hot with ghee rotis or parathas.
