Mixed Vegetable Sabzi or Mix Veg is a traditional Winter recipe that is made in most of the Indian households. This mixed veg sabzi recipe is pretty simple and requires all winter produce. Since Winter is here, this is the perfect time to add as many fresh produce in our diet as possible. Green leafy vegetables, peas, carrots come in abundance during Winter and thus, a perfect recipe to share with everyone.
The mixed vegetable is one of those easy recipes which you can make when you are running short of ideas. You can practically add a little bit of this and little bit of that from your refrigerator in this mixed vegetable recipe. So, that makes it perfect to cook mixed vegetable sabzi when you have those itsy bitsy leftovers lying in your refrigerator. You can add any vegetables of your choice.

Honestly, I was not a big fan of Mixed Veg Sabzi, but as I grew older, I got married – I have started liking it and the fact that it has so many vegetables in it makes it super healthy and thus a favorite in our household.
There are so many variations of making this sabzi, but this is how my mother and mother-in-law makes it. Easy, quick and perfect recipe to make during Winters.
Serve it with ghee roti, parathas or even mix it with Dal-Chawal. *Yum*.

- 2 Medium size Potatoes Diced
- 1 Medium size Capsicum Diced
- 1 Medium size tomato Diced
- 1/2 Cup Beans Chopped
- 1 Bunch Meethi Leaves Finely chopped
- 2 Medium size Brinjals/Baigan Diced
- 1/4 Cup Peas
- 1 medium size Carrot Diced
- 1/2 Cup Cabbage Finely chopped
- 1-2 number Green Chillies Finely chopped
- 2 teaspoon Oil
- 1/4 teaspoon Rai/ Mustard seeds
- 1/4 teaspoon Jeera/Cumin seeds
- a pinch asafoetida/ hing
- 1/4 teaspoon Haldi
- 1/2 teaspoon Dried Red chilli
- 1/2 teaspoon Amchur Powder
- 1 teaspoon Dhaniya powder
- 1/4 teaspoon Garam Masala Powder
- Salt to taste
- coriander leaves for garnish

- Wash, chop all the vegetables beforehand. You can add any vegetables of your choice.
- Heat oil in a Kadhai. Add jeera, rai, hing, and chopped green chilies. Once it starts to splutter.
- Add all the vegetables except tomatoes and let it cook on low flame.
- Add salt so that vegetables start cooking fast. Mix it in between. It will take 5-10 minutes for the vegetables to cook. Cover it with a lid.
- Once the vegetables have cooked add all the spices and chopped tomatoes. Mix it well.
- Cover it with a lid and cook it for another 5-7 minutes, till all the vegetables come together.
- Voila, mixed vegetable sabzi is ready to serve. Garnish it with chopped coriander leaves.
- Serve it hot with ghee rotis or parathas.
- You can add any vegetables of your choice.
- Adjust the spiciness according to your taste and preference.
