Lobia Masala | Punjabi Lobia Curry

Instructions
Soak lobia beans a night before or for at least 6-8 hours.
Next morning, drain the water and pressure cook it with fresh water for 4-5 whistles.
In a kadhai, heat oil – add hing, jeera, dried red chilies, chopped onions. Sauté till onions get cooked a bit.
Add in chopped tomatoes and cook till it becomes soft. Now add all the masalas and salt.
Cook till oil starts releasing and now add this tadka to the cooked lobia beans.
Adjust the water as required. Cook it for another 4-5 minutes. Garnish with chopped dhaniya and serve with roti or rice.
