Peel, cut and de-seed lauki or bottle guard. Once done, grate lauki using a grater. We want it thinly grated just like we do carrots for gajar ka halwa.
Take the grated lauki in your hands and squeeze all the excess water.
Dry roast peanuts and coarsely crush them. Keep it aside.
Add grated lauki and keep cooking it on low flame. After few minutes you will notice a change in the color. Add red chili powder and salt. Mix it well.
Finally add crushed peanuts. Mix it well and cook for some more time.
Garnish it with coriander leaves and serve it hot.
