Lauki Ka Halwa | Dudhi Halwa Recipe | Vrat Recipe

Lauki Ka Halwa or Dhudhi Halwa is a traditional Indian dessert which is made from Bottle gourd. Since Lauki can be eaten during fast/vrat, it’s the perfect recipe to try during Navratri. If you are tired of making Sabudana Kheer,  try Lauki Halwa recipe and serve this as a Bhog to Maa Durga. 

Easy to make and doesn’t require that many ingredients. It’s an easy recipe that is traditionally made by reducing the milk and cooking Lauki into it. There are two ways of making it. Either you can cook grated lauki in ghee and then add milk and reduce it or you can directly cook grated lauki into milk and then reduced it.

To my surprise, my Mother-in-law makes it with all together another way. She makes it by adding Malai and cook the grated lauki in it. Uff, it tastes yummy and tastes rich. The whole idea behind using Malai is to get that mawa/khoya texture to it. If you have malai in your house, try this recipe and feel the difference in taste. It takes less time than the milk-lauki halwa recipe.

Tips to make good Lauki Ka Halwa:
  • Always taste lauki beforehand. If it tastes bitter, avoid that lauki.
  • Lauki should be firm and soft. It should not be hard otherwise it won’t taste good.
  • Always cook it in low flame.
  • If you are cooking with milk, roast it first with ghee, it will give a nicer taste.
  • Use a heavy bottom pan to make it.
  • If you using Malai, take fresh malai or which is accumulated for 2-3 days only. It should not smell sour.

  1. Peel and grate lauki using a grater. Squeeze out the excess water using your hands.
  2. Heat a deep bottom pan and put malai and grated lauki it in.
  3. Cook both of them on low flame for at least 20-25 minutes. Keep stirring in between. It's important to stir in between.
  4. After a while you will see, the malai will start getting thick along with lauki. It will start taking shape of mawa.
  5. Once the lauki has cooked and the smell starts coming. It's time to add sugar and stir along.
  6. Finally, switch off the flame and add crushed/powdered cardamom and saffron strands.
  7. Garnish it with almonds and serve.
