  1. Wash Spinach and take out the stem. Blanch it in water for about 2 minutes. Keep it aside.
  2. Remove the stem of Broccoli and wash it. Blanch it in the same water for 6-7 minutes. Keep it aside.
  3. In a vessel or kadhai, heat oil. To this add chopped onion and garlic. Sauté for a while. Once become transparent, add in the blanched spinach and broccoli.
  4. Cook it for a minute. Now add walnuts and cook it for another minute.
  5. Now add water so that all the vegetables and walnuts get cooked together. Cover it and let it cook on low flame for 5 minutes.
  6. Once cool down. Blend this using a hand blender. Make a soup kind of consistency. It should be blended smooth.
  7. Now in another kadhai, take butter, maida and cook it for a minute. Add milk and stir it to avoid lumps. Let it come to a boil. Pour this into the blended soup.
  8. Heat the soup again on gas and this time add salt and black pepper powder. If you like, you can even add chili flakes.
  9. Let it boil for another 2 minutes.
  10. Serve it hot. Garnish with roasted broccoli florets, fresh cream, and walnuts. Sprinkle some freshly grounded black pepper powder and serve.
Recipe Notes
  • Adjust the pepper and salt according to taste.
  • While serving you can even pour garlic-infused oil for that extra punch.
  • The quantity of Spinach and Broccoli can be adjusted too.
