Achari Paneer Sabzi can be served with Naan, Kulchas, Parathas or even Rotis. This recipe is inspired by “Achari Paneer Recipe” from VegRecipesOfIndia.

- 200 - 250 gms Paneer Cottage Cheese /
- 1 cup curd fresh
- 1 green chilli chopped
- 1/2 t ginger easpoon grated
- 1 tomato medium chopped
- 10 - 12 cashew nuts
- 1 red chilli whole .
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon garam masala powder
- 1.5 tablespoons besan
- 1/2 teaspoon fenugreek dried leaves / kasori meethi
- 2 - 3 tablespoons cream malai thick or fresh
- Coriander leaves for garnish
- mint leaves for garnish
- to taste salt
- 1 - 2 tablespoons butter or oil
- 1 teaspoon fennel seeds sauf /
- 1 teaspoon cumin seeds jeera /
- 1 teaspoon mustard seeds / rai
- 1/4 teaspoon kalonji seeds

Pickle Spices

- First take all the pickle spices in a small pan or small kadhai. Dry roast it for few minutes on low flame till we get a nice aroma from it just don't brown them.
- Once done, switch off the gas and let this cool down. Once the spices are cooled down, add the spices in a mixer blender and make a coarse powder. You can make a fine powder too. Keep this powder aside.
- In the same mixer blender, blend the cashew nuts to a coarse powder. Don't blend it more as we don't want the cashew nuts to leave oil.
- Heat butter or oil in a deep bottom pan. Add whole red chillies, chopped green chillies, grated ginger and sautxe9 for a few seconds.
- Now add chopped tomatoes and cook it for 1-2 minutes.
- Add turmeric powder, coriander powder, red chilli powder, garam masala and mix it well. Cook the tomatoes till you see oil leaving the sides of the pan.
- Now its time to add besan and our achari mixture. Cook it really nice.
- Finally add the whisked dahi/curd. Be quick and fast as it might get curdled. Keep stirring it for few minutes, till you see a boil.
- Add salt to taste and paneer cubes. Mix it well with light hands.
- Finally add cream or malai and crush kasoori meethi on top of it.
- Mix it well and garnish with chopped coriander leaves and mint leaves.
- Tada! No Onion No Garlic Achari Paneer is ready.
- Serve it with Roti/Naan/Kulcha/Paratha.
Notes :
- You can add onion/ garlic too. Can add before we add tomatoes.
- If you want to make it more spicy, you can add achar ka masala which is available at home or any ready made mango pickle will do.
