Seviyan is an Urdu word for Vemicelli which is basically thin noodles made of all-purpose flour or even wheat flour. Seviyan is readily available in the market these days. Buy it from Amazon.

- 1 litre milk
- 1 tablespoon Desi Ghee
- 1 cup Vermicelli / Sevai
- 1/2 cup sugar Can be adjusted as per taste
- few strands Kesar/Saffron
- 1-2 teaspoon Dhoodh Masala
- 2-3 number Cardamom pods Crushed cardamom or cardamom powder.
- Chopped dry fruits as per taste.

- Heat ghee in a kadhai. Add in Vermicelli/Seviyan and lightly roast it till it becomes golden brown in color. Take it aside.
- Heat milk in a deep bottom pan. Let it come to a boil and reduce it to 3/4th. Once the milk gets a little thick, add in the roasted Vermicelli and cook it in the milk.
- Once the vermicelli / seviyan is cooked, add in sugar as per your taste. Add chopped almonds and pistachios or dry fruit of your choice. You can add raisins too if you like. I tend to skip it, not a fan of raisins, lol.
- Add in crushed cardamom or elaichi powder. It elevates the taste to the next level.
- I love adding Dhoodh masala for that extra color and flavour.
- Lastly, add in saffron strands and cook it for 2-3 minutes. Serve it chilled or hot as per liking.
