Lauki or bottle guard khichdi is one easy recipe that can be made in a jiffy. I have learned this recipe from my Mother-in-law and ate it the first time during Navratri. It can be made during fasts or vrat. With few basic ingredients, you can easily make this in no time.
If you will read on the internet, you might find different versions of lauki khichdi being made. But this one has just lauki and peanuts. Peanuts or munghfali is another ingredient which is used during fast and it will give that nutty texture to it.

- 1 Number Lauki/Bottle Guard Medium Size
- 1/2 Cup Peanuts Roasted and Crushed.
- 1 Tablespoon Oil
- 1/2 Teaspoon Jeera/Cumin seeds
- 2-3 Number curry leaves
- 1-2 Number Green Chillies Finely chopped
- 1/2 Teaspoon Red chilli Powder
- salt To taste
- coriander leaves For Garnish

- Peel, cut and de-seed lauki or bottle guard. Once done, grate lauki using a grater. We want it thinly grated just like we do carrots for gajar ka halwa.
- Take the grated lauki in your hands and squeeze all the excess water.
- Dry roast peanuts and coarsely crush them. Keep it aside.
- Heat ghee/oil in a kadhai. Once heated, add curry leaves, green chilies, and jeera. Sauté them well.
- Add grated lauki and keep cooking it on low flame. After few minutes you will notice a change in the color. Add red chili powder and salt. Mix it well.
- Finally add crushed peanuts. Mix it well and cook for some more time.
- Garnish it with coriander leaves and serve it hot.
