Paneer Bhurji

Paneer Bhurji is a popular recipe made out of crumbled paneer/ cottage cheese. This dish is sautéed with veggies and with few spices. Since I love American corn, I decided to add corn and tomatoes to it and it makes the dish looks more colorful and appealing too. You can make by simply adding onions and few spices and it tastes yum too. It totally depends on what ingredients you have. Very easy to make and takes hardly a few minutes.

If you have Paneer at home and you don’t want to make any fancy Paneer dish, you can try this out. Also, it’s perfect for those days when you are lazy but still wants something yummy and comforting to eat. Have it with bread toast for breakfast or with roti / paratha. You can serve it as a side dish too.

Instructions
  1. Crumble the paneer/ cottage cheese using your hand or spoon. Keep it aside.
  2. If you are using frozen american corn, take them out of the refrigerator and wash them with tap water. Let them come to a normal room temperature.
  3. Wash tomato and finely chop it.
  4. Chop green chilli and grate ginger.
  5. Heat oil in a kadhai or pan. Add ginger and green chilli. Sautxe9 them for few seconds.
  6. Add tomatoes and cook it for 1-2 minutes on low flame. We want a bit crunchiness in the tomato.
  7. Add american corn and sautxe9 on low flame. Let it cook for few seconds.
  8. Add turmeric powder, red chilli powder, amchur powder and garam masala powder. Mix it well. Add salt to taste.
  9. Finally add crumbled paneer and just cook for a minute or so. We don't want to over cook the paneer as it will become hard.
  10. Just cook for a minute and switch off the gas.
  11. Crush dry kasoori meethi between your palm and sprinkle.
  12. Garnish it with freshly chopped coriander leaves and serve.
  13. Apply it on toasted bread or serve it with roti/ paratha.

Note :

You can add just onions and avoid tomatoes and corn. Simply cook the same with the basic spices and it tastes yum! 🙂
